damn, i didn't expect you to not have most of it cheddar cheese doesn't have the right flavor at all. pecorino is good, but you could also use parmesan. traditionally it also uses guanciale, but you could also just use bacon. you can also add whatever other bullshit you want, even if it isn't traditional. soy sauce, garlic, onion, and herbs can all be good

Theoretically these are "sides" you're supposed to serve to multiple people with something else, or use in like burritos etc. But, y'know. For us, making one of these is already the highest effort & most variety we get in our diet.
